Introduction:
There are two things about Martin Markvardsen that give away his devotion to whisky and in particular, his love of Highland Park. The first is the tattoo over his heart; Martin is so passionate about the brand that he had the Highland Park amulet and the motto of Orkney permanently inked on his body. The second giveaway is that Martin won’t drink anything made of grapes!
Based in Copenhagen, Martin has been working in the whisky industry for almost a quarter of a century, with over ten years working with Highland Park.
Over the years, his work has seen him involved in every step of whisky production – from overseeing the peat burning to storing casks in our warehouses. He has visited every single distillery in Scotland and worked in several as well. In addition, during his career Martin held the enviable title of being Whisky Manager at the world famous Craigellachie Hotel’s Quaich Bar, in Speyside, home to more than 780 different single malts.
As Senior Brand Ambassador, Martin’s role involves a lot of travelling, as he leads training, education and tasting sessions for bars, restaurants, whisky fairs and clubs. In 2009, Martin was given a great honour when he was asked to be a “Keeper of the Quaich”; and he is also a “Icons of Whisky 2018”, which he is very proud of too.
When he’s not spreading the word about Highland Park around the world, he enjoys weightlifting in his spare time. He has represented Denmark in 22 boxing matches for the national team and was Danish boxing champion twice. He is someone not to be messed with!

1. Love, passion or just work? What is whisky for you?
Good question, and it’s all 3. My love for Highland Park and the Passion for whisky. But …I love and have a huge passion and dedication for my work.
2. The first whisky you remember? Did you like it?
Haha it was a Ballantine’s and I was 15 or 16 years old. I actually remember I liked it a lot, even though we had a wee bit to much.
3. Whisky, the taste of which will remain in your memory forever?
First time I blind tasted Highland Park 50yo, but besides that I have so many great memories of great drams.
4. What are your flavours? Which aspects of whisky are the most important for you?
I like complexity and balance. I have no preference between smoke, peat or unpeated whisky, but I like to find notes like cereals, honey and fruity notes.
5. Do not mix whisky with …? Controversial views on whisky, what do you think about it?
Drink your whisky as you prefer. The only rule about drinking whisky….. is to enjoy it. How you enjoy it is up to you. I normally drink whisky neat or with a drop of water, but must say I had some cocktail recently, that was unbelievably good.
So enjoy your whisky the way you like.
6. Whisky with water or maybe cask strength?
For tasting notes I use a splash of water, but for enjoyment it’s my mood that’s tells me what to do. Most cask strength needs water, but some can be enjoyed without…..
7. The best whisky you’ve ever tasted?
Very hard to say, but 50yo Highland Park stands out, a Springbank from 1966 comes to live as well, but besides that I had some great drams in my life…..uhhhh Black Bowmore, that was a cracker as well.
8. Whisky of your dreams you haven’t tried and would like to do?
I would love to try Highland Park from the late 1890’ies and up to the 2nd world war…..or even older.
9. Your favorite tasting glass?
I always work with a copita glass, the industry nosing glass, but always been fund of Glencairn glass as well.
10. Your favourite whisky cocktail?
Old Fashioned.
11. How do you see the future in the world of whisky? Where can experiments lead us?
There is so many new distilleries coming up and I wish them all luck, but I think it’s more brave then clever to open a distillery today. That said, I like when Donach do experiments, and pretty sure they are on the right track. The thing with experiments and especially for the bigger groups! It takes time, and the experiments we do today won’t really give us outcome and result until 10 years from now, so it’s a tricky part. I do think the world of whisky will be growing, but also a bit stabilized over the next 5-6 years.

Highland Park, milk and Highland Park
13. Your greatest authority in the world of whisky?
Charles Maclean, Ken Grier, Nick Morgan and Jason Craig
14. What book, would you recommend about whisky?
Well depends on what you want to read about. Ingvar Ronde’s Malt Whisky Yearbook is always good, Charles Maclean’s books about whisky history like Maclean’s Miscellany of Whisky and A liquid History. I love Alfred Barnards Whisky Distilleries of the United Kingdom. Never forget the late Michael Jackson’s work as well.
15. Is it worth investing in whisky?
I’m not the right man to ask, as I love whisky too much to see it change hands and never to open.
16. Whisky is one thing, but if not what else you would like to do?
I actually don’t drink other kind of alcohol, maybe a beer now and again, but besides that…..water and skimmed milk.
When I became a Keeper of the Quaich in 2009, it was said: Martin is a true ambassador to the amber liquid, as he never drinks anything made of grapes.

1. Miłość, pasja czy po prostu praca? Czym dla Ciebie jest whisky?
Dobre pytanie, wszystkie trzy. Moja miłość do Highland Park i pasja do whisky. Ale … kocham i mam ogromną pasję i oddanie dla mojej pracy.
2. Pierwsza whisky jaką pamiętasz i czy Ci smakowała?
Haha to był Ballantine’s, a ja miałem 15 lub 16 lat. Właściwie pamiętam, że bardzo mi smakowała, chociaż wypiliśmy trochę za dużo.
3. Whisky, której smak pozostanie na zawsze w Twojej pamięci?
Pierwszy raz gdy w ciemno spróbowałem Highland Park 50yo, ale poza nią mam równie wiele wspaniałych wspomnień z doskonałymi dramami.
4. Jakie są Twoje smaki? Czym sugerujesz się przy wyborze whisky?
Lubię złożoność i równowagę. Nie mam preferencji między dymem, torfem czy nietorfową whisky, ale lubię znaleźć nuty takie jak płatki zbożowe, miód i nuty owocowe.
5. Nie wolno mieszać whisky z…? Kontrowersyjne poglądy na temat whisky, co Ty o tym sądzisz?
Pij swoją whisky tak, jak lubisz. Jedyną zasadą dotyczącą picia whisky ….. jest czerpanie z niej przyjemności. Wszystko zależy od Ciebie, w jakiej formie smakuje Ci najlepiej. Ja zwykle piję whisky czystą lub z odrobiną wody, ale muszę powiedzieć, że ostatnio piłem koktajl, który był niewiarygodnie dobry.
Zatem delektuj się swoją whisky tak, jak lubisz.
6. Whisky z wodą czy może w mocy beczki?
Do notatek degustacyjnych używam odrobiny wody, ale dla przyjemności to moje samopoczucie dyktuje warunki. Większość whisky w mocy beczki wymaga wody, ale niektóre można również pić bez jej dodawania.
7. Najlepsza whisky jaką do tej pory próbowałeś?
Trudno powiedzieć, ale 50-letni Highland Park się wyróżnia, pojawia się też Springbank z 1966 roku, ale poza tym miałem w życiu jeszcze kilka świetnych dramów ….. uhhhh Black Bowmore, to też była wyjątkowa pozycja.
8. Whisky marzeń, której nie próbowałeś, a chciałbyś to zrobić?
Bardzo chciałbym spróbować Highland Parki, od końca lat 90. XIX wieku do czasów drugiej wojny światowej ….. lub nawet starsze.
9. Twoje ulubione szkło do degustacji?
Zawsze pracuję z kieliszkiem typu copita, ale również bardzo lubię kieliszki Glencairn.
10. Twój ulubiony koktajl na bazie whisky?
Old Fashioned.
11. Jak widzisz przyszłość w świecie whisky? Gdzie mogą zaprowadzić nas eksperymenty?
Powstaje tak wiele nowych gorzelni i życzę im wszystkim powodzenia, ale myślę, że trzeba być dzisiaj bardziej odważnym niż sprytnym aby otworzyć destylarnię. To powiedziawszy, podoba mi się, kiedy w Donach przeprowadza się eksperymenty i jestem prawie pewien, że są na dobrej drodze. Rzecz z eksperymentami ma się tak, że zwłaszcza dla większych grup! wymaga to czasu, a eksperymenty, które przeprowadzamy dzisiaj, tak naprawdę nie dadzą nam rezultatów przez najbliższe 10 lat od teraz, więc jest to dość zdradliwa część biznesu. Myślę, że świat whisky będzie się rozrastał, ale też nieco się ustabilizuje przez następne 5-6 lat.
12. Wymień 3 ulubione trunki do degustacji, picia, sączenia?
Highland Park, mleko i Highland Park 😊
13. Twój największy autorytet w świecie whisky?
Charles Maclean, Ken Grier, Nick Morgan oraz Jason Craig.
14. Jaką polecisz książkę o tematyce whisky?
Cóż, zależy od tego, o czym chcesz przeczytać. Malt Whisky Yearbook – Ingvara Ronde’a Malt to zawsze dobry wybór, książki Charlesa Macleana o historii whisky, takie jak Miscellany of Whisky oraz A Liquid History. Uwielbiam Whisky Distilleries of the United Kingdom Alfreda Barnardsa. Nigdy nie zapomnij też o pracach zmarłego Michaela Jacksona.
15. Czy warto inwestować w whisky?
Nie jestem właściwym człowiekiem, aby o to pytać, ponieważ za bardzo kocham whisky, żeby patrzeć, jak zmienia właściciela, a butelka nie zostaje nigdy otworzona.
16. Whisky to jedno, a jeśli nie ona to co?
Właściwie nie piję innego rodzaju alkoholu, może od czasu do czasu piwo, ale poza tym…… woda i odtłuszczone mleko.
Kiedy zostałem Strażnikiem Quaich w 2009 roku, powiedziano: „Martin jest prawdziwym ambasadorem tego bursztynowego płynu, ponieważ nigdy nie pije niczego z winogron.”
