Kontynuuję przygodę z szkocką whisky typu blended malt o nazwie Caisteal Chamuis.
Tym razem do kieliszka trafia nieco starsza edycja, z określeniem wieku najmłodszych destylatów użytych w kupażu na co najmniej 12 lat.
Wciąż są to whisky słodowe ze szkockich wysp. Wciąż określone jako Heavily Peated, czyli mocno torfowe.
Tym razem, początkowo, przez pełne 12 lat, destylaty dojrzewały w beczkach ponownego napełnienia typu hogshead z amerykańskiego dębu. Następnie, rozpoczyna się pierwszy proces ponownego starzenia destylatów, które trafiają do 230 litrowych beczek z dębu amerykańskiego po sherry Oloroso pochodzących z bodegi Jerez de La Frontera. Kolejny etap, to finiszowanie w beczkach o pojemności 500 litrów wykonanych z europejskiego dębu, również po sherry Oloroso.
Whisky butelkowana jest bez filtracji na zimno, a jej kolor jest naturalny. Moc trunku to 46% vol.

Nos: słodki dym, wilgotna piwnica, skóra, smoła, suszone owoce, rodzynki, jabłka w karmelu z cynamonem, kamfora, mentol, nuty morskie, solony karmel, solanka, nuty warzywne (marchew), z czasem więcej dymu, ładny balans, dość złożona, pełna, wyczuwalny mech, wodorosty, mosiężne monety, nuty mineralne, z czasem więcej owocowej słodyczy, słodkie ale także lekko gorzkie cytrusy, ciemne owoce, odrobina orzechów, gruszki, susz owocowy, jodyna, nuty medyczne, ciastka waniliowe
Smak: słodycz owoców wypełniona ziemistym torfem, nuty zbutwiałego drewna, popiół, nuty wilgotnej ziemi, czekolada, suszone owoce, owoce w ciemnej czekoladzie, wędzona śliwka, wiśnie, dym otula owoce, nuty morskie, sól, skóra, słodko gorzka, orzechy, karmel, rodzynki w gorzkiej czekoladzie, nuty trawiaste, siano, węgiel drzewny, owoce leśne, owoce w karmelu, złożony
Finisz: morski, owocowy, cytrusy, owoce leśne, pomarańcze, czekolada, dym, popiół, dość długi
W zapachu już od samego początku mamy „słodki dym”. Jest to na pewno efekt połączenia intensywnie dymnego destylatu z nutami sherry, bo te są tutaj dość wyraźne. Ale od początku…
Pierwsze spotkanie to wilgotna piwnica, a następnie nuty smoły i świeżo wypolerowanej skóry. Po chwili zmiana, więcej suszonych owoców, rodzynki, wędzone śliwki, wędzone czerwone jabłko z dodatkiem karmelu i cynamonu. Przyjemnie, naprawdę. Gdy chwilę pooddycha, pojawiają się nuty świeże, mentolowe oraz kamfora. Czujemy morski klimat, sól miesza się z karmelem, ale pojawiają się również nuty nieco warzywne z marchewką na czele. Z każdą kolejną minutą dostajemy coś nowego. Z owocowej perspektywy, pojawia się więcej jabłek, gruszek, ponownie więcej suszonych owoców, trochę cytrusów i owoców leśnych. Z drugiej strony dostajemy zapach mchu, wodorostów, jodyny, odrobinę medykamentów a także zapach mosiężnych monet. Dzieje się tutaj zaskakująco dużo co bardzo mnie zachęciło do dalszej degustacji.
W smaku przede wszystkim balans między pikantnością, słodyczą oraz torfem. Mamy nuty zbutwiałego drewna, owocowa słodycz miesza się z ziemistym torfem i popiołem. Do tego dołączają wcześniej nie wyczuwalne czekoladowe nuty które również łączą się z owocami. Odnajdujemy w smaku wędzoną śliwkę, wiśnie i rodzynki w czekoladzie. Dym generalnie otula te owoce. Nie brakuje również morskich akcentów, skóry i soli. Pojawiają się orzechy, nutka dębiny a także nuty trawiaste, choć bardziej jest to po prostu siano. Momentami jest słodka, za chwilę nieco gorzka. Wciąż wyraźnie wyczuwalny jest wędzony słód. Całość jest bardzo dobrze zbalansowana. Wszystko ze sobą współgra, dzięki czemu osiągnięto złożoność. Dym nie przytłacza innych nut. No i oczywiście te nuty sherry, specjalnie jakoś tego nie podkreślałem wcześniej, ale jest tutaj taka „dymna winność”, która z każdym kolejnym łykiem się akcentuje, ale co najważniejsze, to nie ona określa profil tej whisky, nie dominuje go.
Finisz trwa dość długo, jest słodko-gorzki. Nadal mamy w nim owoce, głównie są to cytrusy, które tym razem są już nieco bardziej gorzkie. Ziemia, popiół, gorzka czekolada. Wędzony słód. Wciąż bardzo intensywnie.
Podsumowując, Caisteal Chamuis 12yo Blended Malt Scotch Whisky, to whisky, która jest wyjątkowo dobrze skomponowana. Jest złożona i przede wszystkim zbalansowana. Kupaż różnych słodowych whisky, cały proces dojrzewania, wydają się tutaj wyjątkowo dobrze przemyślany. Odnalazłem w niej chyba to co lubię najbardziej w torfowych whisky. Ten słodki dym, to połączenie owoców z torfem. To, że nic tak naprawdę nie gra tutaj roli głównej, a ten drugi plan właśnie ma najwięcej do powiedzenia. Jako wielki fan torfowych whisky, już wiem, że ta edycja Caisteal Chamuis już na stałe znajdzie swoje miejsce w moim barku. Nie, to nie jest whisky przełomowa i jakoś wybitna. Ale ma w sobie coś co daje mi pewien komfort z degustacji. Daje mi przyjemność, a przy tym wiem, że śmiało mogę nalać sobie jeszcze jednego drama, bo mój portfel na tym nie ucierpi. Spróbujcie koniecznie. A najlepiej zestawicie ją sobie z edycją bez określenia wieku, a zobaczycie bez problemu wyraźną różnicę. Mam nadzieję, że większa liczba odbiorców da jej szansę.

I continue my adventure with a blended malt Scotch whisky called Caisteal Chamuis.
This time, a slightly older edition goes into the glass, with the age of the youngest distillates used in the blend being at least 12 years old.
They are still malt whiskies from the Scottish Isles. Still referred to as Heavily Peated.
This time, initially, for a full 12 years, the distillates were matured in American oak refill hogsheads. Then, the first re-ageing of the distillates begins and they are transferred to 230 liter American oak Oloroso sherry casks from the Jerez de La Frontera bodega. The next stage is finishing in 500 liter barrels made of European oak, also after Oloroso sherry.
The whisky is bottled without chill filtration and its colour is natural. The strength is 46% vol.
Let’s see how it tastes:
Nose: sweet smoke, damp cellar, leather, tar, dried fruit, raisins, caramel apples with cinnamon, camphor, menthol, maritime notes, salted caramel, brine, vegetable notes (carrots), more smoke over time, nice balance, quite complex, full-bodied, noticeable moss, seaweed, brass coins, mineral notes, more fruity sweetness over time, sweet but also slightly bitter citrus, dark fruits, hints of nuts, pears, dried fruit, iodine, medicinal notes, vanilla cookies
Taste: fruit sweetness filled with earthy peat, notes of decayed wood, ash, notes of damp earth, chocolate, dried fruit, dark chocolate covered fruit, smoked plum, cherries, smoke enveloping fruit, maritime notes, salt, leather, bittersweet, nuts, caramel, raisins in dark chocolate, grassy notes, hay, charcoal, forest fruits, fruits in caramel, complex
Finish: marine, fruity, citrus, berries, oranges, chocolate, smoke, ash, quite long
In the aroma, we have „sweet smoke” from the very beginning. This is certainly the effect of combining an intensely smoky distillate with sherry notes, because these are quite clear here. But from the beginning…
The first encounter is a damp basement, followed by notes of tar and freshly polished leather. After a while, a change, more dried fruit, raisins, smoked plums, smoked red apple with the addition of caramel and cinnamon. Pleasant, really. When it breathes for a while, fresh, menthol and camphor notes appear. We feel the seaside climate, salt is mixed with caramel, but there are also slightly vegetable notes with carrot at the forefront. With every passing minute we get something new. From a fruity perspective, there are more apples, pears, again more dried fruit, some citrus and forest fruits. On the other hand, we get the smell of moss, seaweed, iodine, a bit of medicinal notes and the smell of brass coins. There is surprisingly a lot going on here, which encouraged me to continue tasting.
The taste is primarily a balance between spiciness, sweetness and peat. We have notes of decayed wood, fruity sweetness mixed with earthy peat and ash. Added to this are previously undetectable chocolate notes that also combine with fruit. We find the taste of smoked plum, cherries and raisins in chocolate. Smoke generally envelops these fruits. There are also maritime accents, leather and salt. There are nuts, a hint of oak and grassy notes, although it’s more like hay. It’s sweet at times and also a bit bitter at times. Smoked malt is still clearly noticeable. The whole thing is very well balanced. Everything works together, resulting in complexity. The smoke does not overwhelm other notes. And, of course, the sherry notes, somehow I didn’t specifically emphasize it before, but there is a „smoky winey note” here that is accentuated with each sip, but most importantly, it does not define the profile of this whisky, it does not dominate it.
The finish lasts quite long, it is bittersweet. We still have fruit in it, mainly citrus, which this time are a bit more bitter. Earth, ash, dark chocolate. Smoked malt. Still very intense.
To sum up, Caisteal Chamuis 12yo Blended Malt Scotch Whisky is a whisky that is exceptionally well composed. It is complex and above all balanced. The blend of different malt whiskies, the whole maturation process, seems to be exceptionally well thought out here. I found in it what I like most about peated whiskies. This sweet smoke. this combination of fruit and peat. The fact that nothing really plays the main role here, and the second plan has the most to say. As a big fan of peated whiskies, I already know that this edition of Caisteal Chamuis will find a permanent place in my cabinet. No, this is not a groundbreaking and somehow outstanding whisky. But it has something that gives me some comfort from tasting. It gives me pleasure, and at the same time I know that I can safely pour myself another dram, because my wallet will not suffer from it. Be sure to try it. And it’s best to combine it with NAS edition, and you will see a clear difference without any problems. I hope more whisky enthusiast will give it a chance.
