BIKKUN Vatted Malt Whisky Cask Strength (57,6% alk.) nie jest rozcieńczana wodą, filtrowana ani barwiona. Składa się z dymnych destylatów ze szkockich wysp, destylatów z regionu Highlands dojrzewających w beczkach po sherry oraz whisky słodowej od Basque Moonshiners starzonej w beczkach Rioja Alavesa.

Smak: słodko-kwaśny, nieco pieprzny, agrest, winogrona, cytrusy, kwaśne owoce, biała porzeczka, kokos, czekoladki z chilli, z czasem suszone jabłka, rodzynki, trochę owoców tropikalnych, mango, melon, pomelo, niedojrzałe gruszki, wanilia, słód, nuty maślane, popiół, wilgotna ziemia, zwęglona dębina, zadymiony słód, dobrze ukryty alkohol

Finisz: ziemisty, popiołowy, kwaśny, gruszki, cytrusy, suszone owoce, dym, słód, wanilia, masło

W aromacie bardzo świeża i wyraźnie dymna. Intensywnie słodowa, a przy tym umiarkowanie słodka. Wyczuwalne są nuty maślane, trochę tostowe wraz z ciasteczkami maślanymi i nutą śmietankową. Jest jednak w niej również sporo ziemistości (wilgotna ziemia), sporo nut popiołu (w tym owoce w popiele) a także nuta mokrych kamieni. Nieco w tle wyczuwalne są cytrusy, trochę grejpfruta, nieco limonki (skórka), ale także rodzynki z dodatkiem czekolady przyprawionej chilli. Jest również pieprz i goździki. Czuć młody destylat choć nuta alkoholowa nie jest tutaj jakoś specjalnie intensywna. Z czasem pojawia się więcej nut białego winogrona, trochę jakby białego wina i nieco świeżej mięty. Tak, aromat jest wyjątkowo świeży i orzeźwiający.

W smaku jest słodko-kwaśna z wyraźną nutą przypraw, nut ziemistych i dymu. Sporo jest tutaj kwaśnych cytrusów, jest wyraźna nuta agrestu i białego winogrona. Pojawiają się białe porzeczki ale także owoce tropikalne jak melon, mango oraz pomelo. Wraca jednak co jakiś czas waniliowo-maślana słodycz z nutą kokosa oraz czekoladą z chilli. Wszystkie te nuty zaczyna otaczać popiół i wilgotna ziemia oraz wyraźnie zadymiony słód jęczmienny, który jest bardzo świeży w ustach. Alkohol jest łądnie ukryty, zupełnie nie przeszkadza ani nie pali w przełyk. Jest prosta, ale przyjemna.

Finisz nie trwa zbyt długo, choć jest wyraźnie ziemisty i popiołowy. Dodatkowo jest słodko-kwaśno-gorzki. Tutaj znajdziemy nieco więcej suszonych owoców. Są rodzynki ale także suszone jabłko i inne suszone owoce sadu. Nadal mamy nuty słodowe, odrobinę wanilii i masła. Na koniec jeszcze odrobina zwęglonej dębiny i delikatnego dymu.

Podsumowując, Bikkun Vatted Malt – Cask Strength – Batch 003, początkowo wydawała mi się bardzo zbliżona do swojej „siostry” zabutelkowanej w mocy 46% vol.. Jednak z czasem znajdowałem w niej co raz więcej różnic. Co ciekawe, miałem wrażenie, że jest nieco mniej agresywna i jakby trochę lepiej zbalansowana. Wciąż jej złożoność może pozostawiać wiele do życzenia, ale jeśli chodzi o profil świeży, dymny i owocowy to akurat tutaj ciężko się jakoś bardzo przyczepić. Na pewno nie jest to whisky monotonnie słodka, jest przełamana zarówno nutami wyraźnie kwaśnymi jak i tymi nieco bardziej gorzkimi. Jest to jednak taka sinusoida, więc po jakimś czasie znowu poszczególne aromaty i smaki wracają. Piło się ją dobrze, momentami nawet bardzo dobrze. Choć jest jeden warunek, musicie lubić młode, świeże whisky. W innym przypadku, nie przypadnie Wam do gustu.

BIKKUN Vatted Malt Whisky Cask Strength (57.6% vol.) is not diluted with water, filtered or coloured. It consists of smoky distillates from the Scottish islands, distillates from the Highlands region matured in sherry casks and malt whisky from Basque Moonshiners aged in Rioja Alavesa casks.

Let’s try it:

Nose: fresh, smoky, hay, wet stones, butter notes, toast, butter cookies, ash, earthiness, wet earth, citrus peels, grapefruits, raisin sweetness, chocolate with chilli, pepper, cloves, young distillate, malt notes, apple in ashes

Taste: sweet and sour, slightly peppery, gooseberries, grapes, citrus fruits, sour fruits, white currant, coconut, chocolates with chilli, dried apples over time, raisins, some tropical fruits, mango, melon, pomelo, unripe pears, vanilla, malt, buttery notes, ash, damp earth, charred oak, smoky malt, well-hidden alcohol

Finish: earthy, ashy, sour, pears, citrus, dried fruits, smoke, malt, vanilla, butter

The aroma is very fresh and clearly smoky. Intensely malty, yet moderately sweet. There are buttery notes, a bit toasty, along with butter cookies and a creamy note. However, there is also a lot of earthiness (damp earth), a lot of ash notes (including fruit in ashes) and a note of wet stones. There are some citrus fruits in the background, some grapefruit, some lime (zest), but also raisins with the addition of chocolate spiced with chilli. There is also pepper and cloves. You can feel the young distillate, although the alcohol note is not particularly intense here. Over time, more notes of white grape, a bit like white wine and a bit of fresh mint appear. Yes, the aroma is extremely fresh and refreshing.

The taste is sweet and sour with a distinct hint of spices, earthy notes and smoke. There are a lot of sour citrus fruits here, there is a clear note of gooseberry and white grape. There are white currants but also tropical fruits such as melon, mango and pomelo. However, the vanilla-butter sweetness with a hint of coconut and chocolate and chilli returns from time to time. All these notes begin to be surrounded by ash and damp earth and a clearly smoked barley malt that is very fresh in the mouth. The alcohol is nicely hidden, it doesn’t bother you at all and it doesn’t burn your oesophagus. It’s simple but pleasant.

The finish does not last too long, although it is clearly earthy and ashy. Additionally, it is sweet-sour-bitter. Here we find a bit more dried fruit. There are raisins but also dried apple and other dried orchard fruits. We still have malt notes, a bit of vanilla and butter. Finally, a bit of charred oak and delicate smoke.

To sum up, Bikkun Vatted Malt – Cask Strength – Batch 003 initially seemed very similar to its „sister” bottled at 46% vol. However, over time I found more and more differences in it. Interestingly, I had the impression that it was slightly less aggressive and slightly better balanced. Its complexity may still leave much to be desired, but when it comes to the fresh, smoky and fruity profile, it’s hard to fault anything here. It is definitely not a monotonously sweet whisky, it is broken by both clearly sour and slightly more bitter notes. However, it is a sine wave, so after some time the individual aromas and flavours come back. It was good to drink, sometimes even very good. Although there is one condition, you must like young, fresh whisky. Otherwise, you may not like it.
